Heather’s Classic…
I just chuck whatever I want in here!! But this is the basic recipe… A yummy sweet treat!
Ingredients
- 2 cups of assorted nuts/seeds (I usually use whatever is in the house: cashews, walnuts, almonds, sunflower seeds, they all work great). You could also put in goji berries, chia seeds, etc… experiment!
- 1 cup of desiccated coconut
- 1 tsp vanilla
- 2 cups of dates (approximately)
- 2 Tbsp coconut oil (as required to make it stick together nicely)
- 1-2 scoops of Protein Powder (optional, but a nice touch :))
Method
- Add the nuts and coconut into a food processor and blitz until broken into little bits. Add the rest of the ingredients.
- Depending on what you put in the mix it could be really sticky, or sort of crumbly. *** Roll in extra coconut if you wish
- I have made it into balls; or put in a slice tin and cut it up; and just recently I’ve been putting them into little muffin tins so that I have perfect portions.
- Pop in the freezer to harden up, then transfer to a Tupperware container and keep in the freezer or fridge. *** Putting them in the freezer means they last longer AND they take longer to eat 😉
